Downgrading Rancher Desktop is not supported; but you can install an older version and then do a "Factory Reset" on the troubleshooting tab. It will re-create the VM from scratch, so you will have to re-create all your images etc.

i find simply running the old version and resetting the kubernetes cluster to be sufficient

It would still be helpful to track down what the underlying issue is. Otherwise you will be stuck on the old version forever, unless it gets accidentally fixed by other changes.
