Can I have multiple clusters that use
--network=host
? Documentation only says there can be 1 server but it's not clear if that's in total or per cluster

Unfortunately not as they would block each other's ports

hmm, my hope was to have multiple clusters that could use Metallb to expose ports for their own IP range on the host. Is that just not doable?

Then you could as well use the "normal" mode and have routing to the "nodes" (containers), since their IPs are routable on Linux.

My hope is to use metallb or something to expose containers at specific ip ranges on my network. I also don't want to have to configure the host any time I deploy something, which feels like there's no solution for this today
