You should be able to look from a Windows shell in

.kube/config

in your home directory. Normally Rancher Desktop would create a symlink to the Windows kubeconfig from the WSL distros you have selected, but it cannot do that if you have an existing config with information about other clusters, as that information would get lost. Ideally you would copy that information to your Windows kubeconfig, and then delete the one in your distro (but keep a backup). Then on the next start Rancher Desktop should create the symlink for you, and you will only have a single file to maintain.

There doesn't seem to be a config file in that directory. I renamed my old config files and reinstalled/reran, but there still isn't a new config file unfortunately

I don't know, there should be a file at

%USERPROFILE%\.kube\config

if you have Kubernetes enabled. If that doesn't get created, then there is something else wrong. Hard to tell without looking at the logs.
