Hello! New Rancher Desktop user here. I like how I can easily switch between K8s versions in RD, but I’m wondering if I can use RD to manage multiple clusters for the same K8s version? For example, I want to be able to switch my context from one 1.24.3 cluster to a new 1.24.3 cluster, without having to reset the former. I don’t need both versions running at the same time, I’m just looking for a way to get a “clean” environment without blowing away something I want to come back to later.

This is not supported by RD itself. I believe you can do this from the commandline by switching RD to use the moby engine, and then use k3d to create / suspend clusters inside docker.
