As long as you label your nodes with the server/agent upgrade label the selector will pick it up and perform the upgrade AFAIK. We run etcd on our "server" nodes, so those got handled by the server plan.

Adjust the plans as suits your deployment. They're examples, not gospel.

Cool thanks, just looking for some guidance so I don't screw it up. Normally I'd just go for it but since I can't restore from backups at the moment I want to make sure it goes as planned.
