You can't. Rancher Desktop creates just a single cluster for you. You can deploy Rancher Manager in it, and then use Rancher Manager to manage additional clusters.

Do you need them running at the same time? We are planning to introduce a snapshot feature, so you could save your current VM state at different times, and revert to any of them later. But only one instance would be running at a time. Would that solve the problem for you?
