Hi, I'm listening! 😄 We have not done any work on Windows containers, because we still haven't figured out how to do Kubernetes support with Windows containers (I believe it still requires RKE2 and doesn't work with k3s, but haven't kept up-to-date). But I realize now that we could maybe just support Windows containers, even without Kubernetes, as a first step.
Please file a Github issue with how you set it up manually, and I'll try to repro. Then we can discuss about how it could possibly be integrated into Rancher Desktop.

Yea k8s is a bit more complicated
Since you need to run the master on the linux side
I'll open a GitHub issue with my manual setup so you can reproduce it
