I currently have one setup as a VM in my two node cluster, though technically not recommended. I've given it around 4 vcpu's and 8gb of ram. This allows me to turn one of the machines off and the single node can run on it's own. This leaves me with the option to boot the other one and migrate the workload over if I have problems with the primary node. The VM disk size must still be met at 250GB minimum, but this isn't much of a problem anymore since the virtual disks are thin-provisioned and I have offloaded all vm disks to a Truenas server with all flash storage, using the Truenas CSI.
