You cannot do it node by node. Pausing is coming in v1.7.0 https://github.com/harvester/harvester/issues/8980 We didn't have any luck with mixing harvester versions in the same cluster

Thank you for this information. Can nodes running different Harvester versions (higher or lower) be joined together in the same cluster?

We tried this before, I can't remember the details but the cluster was not happy and I think we broke upgrades when it came to the next version.
