If I resize the underlying disc on a node. What’s the best way for longhorn to pick it up without restarting the node? I tried nuking the instance-manager but that didn’t help.

Removing/Adding it from the UI?
Just the disk, not the node?

I'm guessing the disk is getting backed by some other source? Like a VM disk ?
It might be easier/better to just add an extra disk instead of trying to expand the existing one, but your setup may not like it. Just a thought.

It’s k8s running on a vm instance running on proxmox.
On a production system I would probably do things differently. Like adding more discs.

Our team might start using proxmox, how do you like it? Is there a provider in rancher? Decent?

I think we'll continue to use it in some capacity, but we're merging with another department and they're proxmox users.

I was this years old when I learned about harvester
Proxmox is ok. I use it for homelab stuff. It’s all VMs and discs. I guess it’s fine for my needs but I have no production experience with it.
As I don’t have the enterprise license and my setup is small I’m missing out on the real bells and whistles.
That said. I’ve had zero issues with it. It’s stable as a rock even on oss license.
Now I need to go read up on Harvester 😄
