Speaking personally, I look at https://github.com/k3s-io/k3s/releases and pick the highest non-
rc
release for the Kubernetes version I want.

K3s is Kubernetes. The branches are maintained and see new releases as long as upstream continues releasing on them. You should be looking at the Kubernetes release schedule. https://kubernetes.io/releases/
