short answer is that OS Management / Elemental is an 'extension' of Rancher so it is not listed in the Rancher support matrix page... the fair follow up question is where is the list of supported extensions on Rancher (per version)... and we're missing it

Yes it is possible, you can use the edge image builder and have it install rke2, rancher, and any apps you need. Check the examples directory in the repo to get you started
