Rancher Backup only backs up Rancher itself, and only resources related to rancher. For instance, it doesn't back up any deployments except the rancher-esc ones (rancher-operator, gke-config-operator, aws-config-operator, only certain fleet-* ones, etc) So it wouldn't do what you want, what it sounds like you need are etcd snapshots of the downstream cluster. https://rancher.com/docs/rke/latest/en/etcd-snapshots/

You can take a snapshot of a Rancher managed cluster by going to cluster management. Then in the list of clusters, you can go to the context menu (the three dots) and click to create a snapshot. If the cluster was provisioned by Rancher I'd expect it to already have recurring snapshots there by default.
