For some of what you're looking for, we've intentionally limited the exposed flexibility, to help simplify the deployment experience for the developers that shouldn't be aware of the cloud-native components (or the users that don't need to know both dockerfiles and buildpacks). That's not to say that these features aren't necessary or aren't coming. You've definitely found there is more under the hood than is surfaced in the documentation as well. Would it be possible to hop on a research call with you soon and see how you're envisioning the developer experience and operator experience, and hash through those use-cases? And I can share some notes back as well.
