This was working successfully for a week or so

You had Rancher Desktop running continuously for a week or you closed, launched the app multiple times? There's a known bug where some macOS users run into problems after machine sleep/awake. https://github.com/rancher-sandbox/rancher-desktop/issues/1274

I stopped and started Rancher Desktop several times. I transitioned from Docker Desktop about a week ago. I've already tried a factory reset. Which log files would be helpful to the ticket?

If possible, zip and share the entire logs folder please. Otherwise, below files might help starting the investigation.
