I do exactly that for a few research collaborations, with essentially a wrapper around the Helm chart you linked that deploys a Synapse server and an Element web client. The OIDC integration allows us to have SSO login to the Matrix server using our central Keycloak server (that, in turn, allows researchers to use their institutional identity providers for authentication).
