You can go to Advanced > Storage Classes > Create And set the "Number Of Replicas" to "1"
then use this storage class when creating VM images, virtual machines, etc.

thanks @bored-painting-68221! But in that case, is there any risks regarding the default deployed helm chart ? I mean I can destroy/recreate the existing deployment for harvester-longhorn storage classe, but I would not mess the core system of harvester ?
Moreover, This way I can fine-tune dedicated CPUs as the config script allows to. It's a pain to fully re-install a node because I want to change such kind of configuration parameters !

I think the usual recommendations are to not modify the Longhorn deployment that ships with Harvester and instead to create a different storage class as described above
though it does not offer that degree of customization
