(unofficial opinion, just my own experience) I'd recommend using Amazon Linux if you're on AWS

AZ2 would fall under RHEL 7, AZ23 falls under RHEL 8
I don't know if it is explicitly supported, I'd defer to someone actually on the rancher team to answer that. But I have had no problems in my experience

I have used rancher and rke on AWS in Ubuntu for 4 years and I want to update it, and I want to evaluate a new option, in every aspect... If it is not AWS, another cloud or another. alternative have you had to use that you recommend?

Remember that the support matrix shows what they've taken the time to test and document and make things easier with it's expected setup. As long as it's close to one of those, you're probably in three nines territory of safety, though every step farther you get a higher chance of odd problems, but if you wanted to put the time into it and didn't mind doing lots of debugging you could probably get it working with any distro, just a question of how much time you'd spend debugging and fixing things or using a different kernel build than the distro provides, etc.
