Well as per the usual, the problem was between the chair and keyboard. I had left the monitor plugged into the Minisforum pc after I had set it up. I went down to check it and realized the monitor was blank. Unplugged the monitor and went upstairs to recreate the VM and now it at least starts. We shall see if I can use the GPU
